Marry Me Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- 1 tsp Italian seasoning
- 1 tsp salt
- 4 tsp smoked paprika (for both marinading & cooking)
- 1 tsp freshly ground black pepper
- 3 tbs olive oil (for marinade & cooking)
- 4 garlic cloves, minced
- 75g cherry tomatoes
- 50g finely chopped yellow onion
- 20g sun-dried tomatoes, thinly sliced
- 100g baby spinach
- 200ml heavy cream
- 150ml chicken stock or white wine
- 25g freshly grated parmesan
Instructions:
- Pound chicken until thin and uniform to ensure the chicken cooks evenly
- Marinate the chicken with paprika, Italian herbs, salt & pepper, EVOO & any other seasonings of choice
- Pan fry chicken breast until caramelised on both sides in a wide hot frying pan & remove once 80% cooked
- To the same pan, add in about 1 tbs of the sundried tomato oil
- Sautee onion & garlic until soft, followed by sundried tomatoes & half of the cherry tomatoes
- Add more paprika to taste, then mash tomatoes until soft
- Deglaze with white wine, water or chicken stock & bring up to boil
- Add in cream, bring up to a simmer & add in chicken breasts
- When bubbling, add in the balance cherry tomatoes
- Turn down heat & add in spinach
- Sprinkle over freshly grated Parmesan or Pecorino followed by fresh parsley or basil
